The Daily Mail pays a visit to Todmorden, a quaint British town that’s littered with raised vegetable and herb gardens where residents can grow — and take — whatever they fancy.The ethnically and economically diverse mill town of about 15,000 residents is home to Incredible Edible, an ambitious, agrarian-minded scheme that’s brought together an entire community under one common goal: to become completely self-sufficient in food by the year 2018.

63 degrees on the last day of January?! This calls for a celebration… in the form of Blue Moon cupcakes. Hands down the most delicious batch of cupcakes I’ve ever baked. Ladies, if your boyfriend loves Blue Moon, you should bake these for him on Valentine’s Day. And gentlemen, too, if you can bake.. have at it. Men in the kitchen baking/cooking? Marriage status.
Blue Moon cupcakes
- 3/4 cup unsalted butter, softened
- 1 3/4 cup sugar
- 2 1/2 cup flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 3 eggs, room temperature
- 1/2 tsp orange zest
- 1 cup Blue Moon beer
- 1/4 cup milk
Mix flour, baking powder, and salt in a bowl. In a small bowl, mix beer and milk. In another bowl, beat butter and add sugar a little bit at a time, beat it reaaaal good. Add one egg at a time, beating after each time. Add vanilla, food color (if you want it to look more like wheat, add 2 drops red food coloring and 10 drops yellow food coloring), orange zest. Alternate pouring the flour mixture and beer mixture into the butter mixture. Beer, flour, mix, beer, flour, mix (make sure you end with flour). Bake at 375 degrees for 18 minutes or until a toothpick comes out clean.
Frosting
- 2 egg whites
- 1 tsp vanilla extract
- 1 tbsp orange juice
- 1 cup sugar
- 1/4 tsp cream of tartar
- 1/3 cup water
Mix sugar, water, and cream of tartar in saucepan and cook on medium heat until the sugar dissolves and starts to bubble. Beat the egg whites, vanilla, and orange juice until soft peaks form. Slowly add the sugar mixture and beat until stiff peaks form. (side note: I accidentally added in 1/4 cup cream of tartar instead of a tsp… still came out good though haha)
Garnish with orange slices
